How to Make Healthy Appam | Rice and Coconut Pancakes

Appam & stew is a traditional breakfast recipe in the state of Kerala.

Kerala, also known as ‘God’s own country’ has abundant rice plantations and coconut plantations and hence most of their dishes are made of rice and coconut.

Though I am a South Indian, my mom never made appam recipe at home. It was after marriage that I checked out some videos and learned how to make appam. I then tried making appam stew at home and my family enjoyed it a lot, especially my daughter. She savors it so much that she can just keep eating them till you stop serving.

Traditionally appams are made with white rice but today I tried making them with brown rice as it is healthier than white rice. Stew is made with vegetables and coconut milk.

How to make appam batter at home?

INGREDIENTS

  • 2 cups white rice or brown rice
  • 1 cup parboiled rice
  • A fistful of beaten rice or poha
  • 1 – 1.5 cup of grated coconut or 1 cup of thick coconut milk
  • ½ teaspoon dry active yeast
  • 1 tablespoon jaggery
  • 1 tablespoon salt
  • water as required for grinding

METHOD

  • Rinse both varieties of rice together and soak them in water for 4-5 hours.
  • Drain the water and add the rice to the grinder.
  • Wet the poha in water and add it to the rice.  Add fresh water and grind the rice and poha to form a smooth batter.
  • Proof the yeast separately in lukewarm water. Take 3-4 tablespoons of warm water in a cup. Add jaggery and yeast to it and keep the cup in a warm place. The mixture will become frothy in 10-15 minutes.
  • Add the yeast mixture to the rice batter and allow it to ferment for 8-10 hours depending on your weather conditions.
  • The batter will rise and increase in volume after fermenting.
  • Heat a kadai or an appam pan.
  • Once hot, pour 2 ladles of batter on it and tilt the pan to spread the batter.
  • Cover the pan and let the appam cook. Wait till the base becomes light brown in color.
  • Serve the appam with vegetable stew or sweetened coconut milk.

Note

If the rice batter becomes very thin, add some rice flour to it to adjust the flowing consistency.
