The Pudina Paratha recipe is a soft, layered mint-flavored flatbread.

Pudina refers to mint leaves in Hindi and paratha means flatbread made from whole wheat flour. Mint adds a unique flavor to the paratha and it tastes just awesome when the mint leaves are mixed with other spices in this bread. 

Green leafy vegetables are important for your diet as they are packed with vitamins, minerals, and fiber. They are also low in calories. Pudina is one among them. You can also make parathas with other greens like spinach, coriander, fenugreek leaves, and kale. You can also make Pudina chutney for paratha as an accompaniment. Pudina chutney is made in many households for sandwiches or as an accompaniment for snack items. 

I love the aroma of pudina and enjoy making pudina parathas for my family. In this recipe, I have used fresh mint leaves. Instead, you can also use dried mint leaves. This recipe can be had either for breakfast or lunch. Pudina paratha also makes a perfect lunch box recipe for school/office and can be enjoyed with pickle and raita.

How to make Pudina Paratha?

INGREDIENTS for the dough

½ cup mint leaves finely chopped

2 cups whole wheat flour

½ tsp salt

1 tsp Coconut butter

Water to knead the dough

 

Spice mix for pudina paratha

½ cup mint leaves

1 teaspoon cumin seeds

½ teaspoon fennel seeds

1 whole Kashmiri red chili

1 tablespoon chaat masala

 

 METHOD

How to knead the dough? 

  1. Rinse the mint leaves and chop them finely. Half of the mint leaves will be mixed with the flour while the other half will be used to prepare the spice mix.
  2. Take a vessel and add ½ cup chopped mint leaves, salt, coconut butter, and whole wheat flour. Mix well so that there are no lumps.
  3.  Add water little by little and knead it together to form a firm dough.
  4.  Cover and keep it aside for 30 minutes

 

How to prepare the spice mix for the paratha? 

  1. In a pan dry roast, the mint leaves till it becomes a little crisp. Remove them aside on a plate.
  2.  In the same pan dry roast the cumin seeds, fennel seeds, and red chili till they release a nice aroma. Grind them into a fine powder.
  3.  Add the roasted pudina to this powder and grind it again.
  4.  Add the chaat masala and mix it well.

 

How to roll the pudina paratha?

 Divide the dough into equal portions.

 Take one portion and roll it into a chapati, spread some coconut butter, and sprinkle the spice mix evenly on the chapati

 Now pleat the chapati like a fan and roll it tightly into a circle. Keep them aside for 15 minutes.

 Take one pleated ball, dust some flour on top, and roll it into a paratha.

 Roast the paratha in your Tawa till brown spots appear on both sides.

 Remove it from the flame

 Serve it with any plant-based curd-like coconut curd or peanut curd or any vegetable gravy or dal.

Note – You can also make aloo pudina paratha by adding boiled potatoes to the spice mix.
